Low Carb Pepperoni Pizza Casserole
This casserole is a tasty, low-carb and keto-friendly take on regular pepperoni pizza. It's full of flavor and great for feeding a big family. You can add pepperoni slices for extra protein if you want, but it doesn't have any meat in it. Since cauliflower is used as the base, it's a healthy and satisfying alternative to regular pizza.
Ingredients:
- 1 large head cauliflower, cut into florets
- 1 cup marinara sauce sugar-free for keto
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil leaves
- 1/4 cup sliced black olives
- 1/4 cup sliced pepperoni optional
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
Warm the oven up to 190C 375F
Prepare a 9x13-inch baking dish by greasing it
It takes about 5 to 7 minutes for cauliflower florets to get soft when steamed or boiled
Drain well
Cauliflower, marinara sauce, Parmesan cheese, basil, olives, pepperoni if using, garlic powder, oregano, salt, and pepper should all be mixed together in a large bowl
Mix well
Move the mixture to the baking dish that has been prepared
Spread it out evenly, and then sprinkle the last cup of mozzarella cheese on top
After the oven is hot, bake for 20 to 25 minutes, or until the cheese is bubbly and golden brown
Let it cool down for a while before you serve it
