Smoky Black Bean and Tofu Scramble Tacos
Ingredients:
- 1 can 15 oz black beans, drained and rinsed
- 1 block 14 oz extra-firm tofu, crumbled
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric powder
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 8 small tortillas
- Optional toppings: avocado slices, salsa, lime wedges
Instructions:
Heat the olive oil in a big skillet over medium heat
When the onions are translucent, add them chopped and saut
Add the minced garlic and continue cooking for one more minute
Add the black beans, cumin, smoked paprika, turmeric, crumbled tofu, salt, and pepper
Cook the tofu for 5 to 7 minutes, stirring now and then, or until it's golden and cooked through
Cook the cherry tomatoes for a further two to three minutes, or until they become soft
Take off the heat and add the chopped cilantro
As directed on the package, warm the tortillas
Spoon the smoky black bean and tofu mixture onto each tortilla to assemble the tacos
Add optional garnishes like salsa, sliced avocado, and a squeeze of lime
