Crock Pot Tomato Basil Soup with Cheese Tortellini
A tasty and comforting tomato basil soup made with tortellini that has been cooked to perfection in a crock pot. Just right for a cozy dinner!
Ingredients:
- 1 can 28 oz crushed tomatoes
- 4 cups vegetable broth
- 1 cup diced onion
- 3 cloves garlic, minced
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package 9 oz refrigerated cheese tortellini
- 1/2 cup heavy cream
- Fresh basil leaves, for garnish
- Shredded Parmesan cheese, for garnish
Instructions:
Put crushed tomatoes, vegetable broth, diced onion, minced garlic, salt, black pepper, dried basil, and dried oregano in a crock pot
Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours
You should add the cheese tortellini and heavy cream about 30 minutes before you serve
Put the lid on top and cook on high for another 30 minutes, or until the tortellini is soft
Add fresh basil leaves and shredded Parmesan cheese on top while the food is still hot
