Cornbread Waffle Pulled Pork Sandwiches
Ingredients:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 cup shredded cheddar cheese
- 2 cups pulled pork prepared and warmed
- 1/2 cup barbecue sauce
- 1/2 cup coleslaw
- Pickles for garnish
Instructions:
Put the cornmeal, all-purpose flour, sugar, baking powder, and salt in a bowl and mix them together
Mix the eggs, vegetable oil, and buttermilk together in a different bowl
Add the wet ingredients to the dry ones and mix them together just until they are mixed
Add the shredded cheddar cheese and mix it in
Warm up your waffle iron and use non-stick spray to lightly coat it
Following the maker's instructions, pour enough batter into the waffle iron to cover the waffle grid
Cook until golden brown and crisp
Heat the barbecue sauce and pulled pork in a saucepan over medium-low heat until the pork is fully cooked
Spread a big piece of pulled pork on a plate, drizzle it with barbecue sauce, and add a spoonful of coleslaw on top of the cooked cornbread waffle
To make a sandwich, put another cornbread waffle on top
Add pickles on top and serve hot
