Bacon Cheeseburger Soup
Ingredients:
- 1 lb ground beef
- 6 slices bacon, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can 14 oz diced tomatoes
- 1 cup diced potatoes
- 1 cup diced carrots
- 1/2 cup diced celery
- 1/4 cup ketchup
- 1/4 cup mustard
- 1/4 cup pickles, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Green onions and additional cheese for garnish
Instructions:
Cook the chopped bacon until crispy in a large pot
Take out and place aside
Brown the ground beef in the same pot over medium heat until it's cooked through
Eliminate extra fat
Add minced garlic and onions to the pot
Saut onions until they become transparent
Add the diced celery, carrots, and potatoes and stir
Simmer for a few minutes, or until very tender
Pour in the beef broth, mustard, ketchup, and diced tomatoes with their juices
Mix thoroughly
Cook the soup for fifteen to twenty minutes, or until the vegetables are soft
Add the heavy cream, shredded cheddar cheese, and chopped pickles
Cook until the soup is thoroughly heated and the cheese has melted
To taste, add salt and pepper for seasoning
Serve the hot Bacon Cheeseburger Soup with extra shredded cheddar cheese, chopped green onions, and crispy bacon bits as garnish
